Drawing on insights from its network of more than 50 chefs across six continents, Griffith Foods' annual Food & Flavour Outlook identifies the most anticipated consumer trends through extensive culinary industry research and collaboration with trusted research partners. The report reveals how evolving consumer preferences are shaping the future of food innovation worldwide.
"Next year, based on consumer trends, we are predicting that European consumers will be motivated by a combination of more layered, bold flavours, the craving for even more protein, and distinct textures in every bite," says Sara Diaz, Marketing Director Europe at Griffith Foods.

From new takes on street food to nutrition-packed innovations, these six trends are set to reshape how the world eats in 2026.
1. POWERED BY PROTEIN
Protein-rich foods are here to stay. Consumer trends show a 49% increase in demand for protein in the UK and a 120% increase in Germany. According to a recent global study, more than 48% of consumers intend to boost their protein consumption1.
The potential benefits of a protein-rich diet, such as satiety, muscle health and energy, appeal to consumers of all ages. When protein-packed foods are both affordable and craveable, it is no surprise that they are finding success across global markets.
2. CRAVEABLE TEXTURE
From crunchy and creamy to chewy and more, texture has become a key attraction, particularly in Europe. Consumers in the UK report a 43% year-on-year increase in engagement with textured foods, while Germany has seen a 19% increase. Consumers are looking to go beyond flavour and fully engage the senses, making texture a critical part of the menu.

3. STREET FOOD DISCOVERY
In Europe, food truck and street vendor sales are projected to grow by 21% between 2025 and 2029, a clear sign that more street food flavours are coming to the mainstream. What began with sidewalk carts and open-air markets featuring locally sourced offerings has sparked the curiosity of consumers, restaurants and manufacturers alike.
Street food has become a culinary category in its own right. From handheld snacks to food on a stick, almost anything goes. Street food vendors are expected to generate USD 11 billion in worldwide sales by 2029, tripling their market value compared with 20153.
4. MAXIMALIST FLAVOURS
Consumer trends also point to a growing appetite for bolder and more complex food experiences, including a 113% increase in Germany. Layers of smoky, spicy, sweet, sour and umami flavours are shifting flavour paradigms and bringing excitement across culinary categories.

5. NUTRITION MEETS TRADITION
Wellness remains a major focus for consumers. In Germany alone, consumer trends showed a 156% increase in demand for nutrition-rich foods - those higher in vitamins, minerals, fibre and protein, and lower in saturated fat, sodium and sugar.
Time-tested, nutrient-dense foods are becoming the hero ingredients behind consumers' growing interest in wellness. Contemporary flavours are also bringing new life to age-old herbs, spices, legumes and grains.
A recent global consumer survey showed a shift towards nutrient-dense foods, with nearly 60% of consumers paying closer attention to food ingredients than they did just a year ago5.
6. CRAFTED CONDIMENTS
Condiments have evolved far beyond the basics. Today, signature condiments are adding excitement and bursts of flavour to foods around the world.
In the UK, consumer trends show a 139% year-on-year increase in demand for premium food experiences, while Germany has seen a 115% increase. As consumers look for low-risk, high-reward ways to personalise meals and make the most of their dining budgets, condiments have become the perfect kitchen hack.
